The *dolce* half of the Gorgonzola family: younger, wetter and far milder than *piccante*, ripened around two months and often sold in a foil jacket because it will not hold a shape.

Sweet, milky and lightly mushroomy with only a gentle blue prickle. Melt it into polenta or risotto and it disappears into the dish entirely.
