Stilton has a protected designation covering three counties, none of which contains the village of Stilton; the village was the coaching-inn stop where the cheese was sold, not made. Only six dairies are licensed to produce it.

The curd is hand-ladled and never pressed, which leaves the open texture the blue needs. Rich, mineral and lightly peppery, with a long buttery finish. Do not pour port into it — cut it in wedges from the top.
