Possibly the oldest French cheese still made — a carving in a chapel at La Chaulme is said to show it. It comes as a tall cylinder about 13 cm across rather than the usual squat wheel.

The blue is mild and the paste is unusually smooth and creamy, so it is the blue to hand someone who says they do not like blue. Locals soak it in Sauternes, which is not subtle but is very good.
