Jane and Louis Grubb made the first Cashel Blue in 1984 from their own herd's milk on the Tipperary plain — Ireland's first farmhouse blue cheese.
Mild and buttery when young, with a gentle blue tang; left a few months longer it becomes rounder and more mushroomy. Much easier company than most blues.
