The story — that Napoleon returned from a failed Egyptian campaign, saw a pyramid on Talleyrand's cheese board and struck the top off with his sword — is almost certainly invented. The shape is real either way.

Salted charcoal ash on the outside, goat's milk within: citric, nutty, drying to something firmer and more mineral as it ages. Very good with a Loire Sauvignon Blanc grown a few fields away.
