Awarded to the Congress of Vienna in 1815 as the *roi des fromages* and protected by AOP since 1980, Brie de Meaux is made from raw cow's milk in wheels roughly 36 cm across. It is a different animal from the stabilised supermarket brie: the paste runs at room temperature, the rind smells of mushroom and wet straw, and the flavour builds towards ammonia if you leave it a week too long.

Buy it cut, so you can see whether the centre has broken down.
