Mary Keehn founded Cypress Grove in Arcata, California, and says the design came to her in a dream on a flight home from France: a stripe of ash through the centre and another under the bloomy rind.
It ripens from the outside in, so a cut wheel shows three bands — soft and buttery at the edge, chalky and lemony at the core, ash between. Bright, citric, and the most recognisable American cheese made.
