Uplands Cheese in Wisconsin makes it in the Beaufort style, and only between May and October, when the herd is grazing rather than eating stored feed — so there is no winter production at all.

It has won the American Cheese Society's Best in Show three times, more than any other cheese. Grassy, brothy and nutty, with a caramel sweetness and a long savoury finish.
