Made only from Tarine and Abondance milk, hooped in a beech-wood band (the *cercle à Beaufort*) that leaves the wheel with its distinctive concave sides. *Beaufort d'alpage* is made in the high summer pastures, from one herd, and is the best of it.
No eyes, a very smooth dense paste, and a flavour that runs from milky and floral to deeply fruity and nutty. It is the fondue cheese that makes people rethink fondue.
