Every wheel is rubbed during ageing with *Sulz*, a brine of herbs, wine and spices whose exact composition is held by the producers and has never been published. The claim is not marketing: the recipe is deliberately restricted.
The cheese is fruity, spicy and increasingly pungent with age. The black-label *Extra*, aged at least six months, is the serious one.
