Made after Colbert banned Dutch imports in the seventeenth century, so France could have its own Edam. Annatto gives it the deep orange; the moon-crater rind is the work of *Acarus siro*, cheese mites deliberately introduced to aerate it.
Extra-vieille at two years is hard, brittle and tastes of butterscotch and hazelnut, with a salty caramel finish. American customs has taken issue with the mites more than once.
