Brought to Wensleydale by Cistercian monks from Roquefort, who made it with sheep's milk; it went over to cow's milk centuries later. The Hawes creamery closed in 1992 and was bought back by its managers, whose fortunes were transformed when Wallace and Gromit made the cheese a national joke.

Mild, honeyed and crumbly with a fresh acidity. Traditionally eaten with fruit cake in Yorkshire, an arrangement outsiders find alarming and then adopt.
