Made in the Bavarian Alps from raw summer milk, in wheels of 15 to 50 kg, using techniques imported from Switzerland in the nineteenth century when Allgäu farmers switched from flax to dairy.
It is sweeter and gentler than Gruyère, with hay and hazelnut notes and a clean finish. Underrated outside Germany largely because it does not travel much.
