Hard & aged Cow’s milk

Red Leicester

Cheddar-adjacent, dyed with annatto since farmers wanted their milk to look richer.

An illustrated wedge of Red Leicester

Drawn by the app from this cheese’s own record — paste, rind and texture come from the data, not a stock library.

The orange comes from annatto, added historically because a deeper colour suggested richer milk — a marketing decision from the seventeenth century that stuck. The make is close to cheddar but with a moister, flakier curd.

Mellower and sweeter than cheddar, with a caramel note and a light nuttiness. Farmhouse examples aged past nine months are much better than the block.
