The orange comes from annatto, added historically because a deeper colour suggested richer milk — a marketing decision from the seventeenth century that stuck. The make is close to cheddar but with a moister, flakier curd.
Mellower and sweeter than cheddar, with a caramel note and a light nuttiness. Farmhouse examples aged past nine months are much better than the block.
