*Racler* means to scrape. The half-wheel is set against a heat source and the melted face is scraped onto potatoes as it goes — a herdsman's supper that became a national dish.

The cheese itself is nutty and mildly funky, but the point is what it does with heat: it melts to a glossy sheet without splitting or turning stringy. Cornichons and pickled onions are not optional.
