The line is ash — originally soot from the bottom of the cauldron, smeared over the evening's curd to protect it overnight until the morning milking could top it up. Today it is vegetable ash and purely decorative, but the AOP requires it.

The cheese itself is gentle: milky, fruity, with a little washed-rind savouriness at the edge. The seam adds nothing but the story, which is enough.
