Made in Portugal's highest mountain range from raw Bordaleira sheep's milk, coagulated with cardoon thistle. Records of it go back to the twelfth century and the technique has changed remarkably little.

The paste is buttery and slightly bitter with a distinct lanolin richness. Aged past four months it firms into *Serra Velho*, a completely different, harder, sharper cheese.
