Mary Burns started making Ardrahan on the family farm in County Cork in 1983, at the front of the Irish farmhouse-cheese revival. The rind is brine-washed to a deep russet.
Savoury, meaty and earthy, with a buttery paste and a distinctly farmyard nose. Irish grass-fed milk shows in the sweetness underneath.
