Made in south Wales as a young, salty, fast-selling cheese; the salt was said to be why colliers carried it down the pit. Nearly wiped out by wartime rationing and revived by a handful of farmhouse makers.
A mature Caerphilly has two textures in one slice: crumbly and lemony in the middle, soft and mushroomy in the ring under the rind. Excellent grilled on bread.
