Made from partly skimmed milk, so it is lower in fat than Gouda and keeps for months without spoiling — which is why Edam travelled on ships for centuries and turned up everywhere from the Caribbean to the Philippines.
Young, it is mild, faintly salty and springy. Aged Edam is a much better cheese: firmer, saltier, nuttier, and rarely exported.
