Made in the Picos de Europa from cow's milk, or a blend with goat and sheep when the seasons allow, and matured in natural limestone caves where humidity sits near saturation and the blue arrives without being inoculated.
It is intense: salty, acidic, spicy, with a long burning finish. Asturians drink cider with it. A small amount goes a very long way.
