Made from Manech and Basco-Béarnaise sheep in the western Pyrenees, where the shepherds' transhumance routes are older than the border. One of only three French sheep's-milk AOPs.
Sweet, oily-textured and gentle, with hazelnut and lanolin notes rather than the sharpness people expect from sheep's milk. Eaten locally with black cherry jam from Itxassou, which is not a garnish so much as part of the cheese.
