Made from partly skimmed milk with cumin — and often caraway — kneaded through the curd. Farmhouse wheels carry two crossed keys, the arms of the city of Leiden, pressed into the rind.

The seeds do most of the work: warm, aromatic and slightly bitter against a dry, salty paste. Traditional versions are made by treading the curd by foot, which is exactly as it sounds.
