Protected since 2002, which means feta made in Denmark or Germany can no longer be called feta in the EU. Real feta is at least 70% sheep's milk, the rest goat, matured in wooden barrels or tins of brine.
Salty, tangy and grassy, with a firm crumble. Cow's-milk imitations are softer, whiter and blander. Buy it in brine, never vacuum-packed dry.
