Made at Ram Hall in Berkswell since the 1980s, from the farm's own flock. The distinctive dimpled, flying-saucer shape comes from the colanders the curd is drained in — a piece of improvisation that became the cheese's signature.
Dense and sweet with a fruity, almost tropical note and a lanolin richness. It stands comparison with any Pyrenean or Sardinian sheep's cheese.
