Ripened in caves in the Val Taleggio and washed weekly with seawater sponges to keep unwanted moulds down. The rind ends up pink-orange with grey patches and a genuinely pungent nose.
The paste is mild, fruity and buttery, with a tangy finish — one of the great gateway washed rinds. It melts superbly onto bread or into risotto.
