The name means *cheese on horseback*, from the way pairs are tied together at the neck and slung over a pole to age. It is stretched curd, like provolone and mozzarella, but shaped into a teardrop with a small head.
Young it is mild and milky; aged it turns sharp, salty and slightly piquant. Sliced thick and seared in a dry pan, it browns and squeaks.
